Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1, diced
  • Potato - 1 medium, peeled and cubed
  • Green beans - 100 grams, trimmed and cut into 2 cm pieces
  • Vegetable broth - 500 ml
  • Saffron threads - 1 pinch
  • Fresh thyme - 1 teaspoon, chopped
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Heavy cream or coconut cream - 100 ml
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sauté until the onion becomes translucent, about 5 minutes.
  2. Add the sliced carrot, zucchini, red bell pepper, and cubed potato to the pot. Stir and cook for another 5 minutes until the vegetables are slightly softened.
  3. Pour in the vegetable broth and add the green beans, saffron threads, chopped thyme, bay leaf, salt, and black pepper. Bring to a gentle boil.
  4. Reduce the heat to low, cover the pot, and let it simmer for 20 minutes until all the vegetables are tender.
  5. Remove the bay leaf and stir in the heavy cream or coconut cream. Adjust seasoning if needed and let it heat through for another 5 minutes.
  6. Serve hot, garnished with fresh parsley.
