- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, sliced
- Zucchini - 1 medium, diced
- Red bell pepper - 1, diced
- Potato - 1 medium, peeled and cubed
- Green beans - 100 grams, trimmed and cut into 2 cm pieces
- Vegetable broth - 500 ml
- Saffron threads - 1 pinch
- Fresh thyme - 1 teaspoon, chopped
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Heavy cream or coconut cream - 100 ml
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sauté until the onion becomes translucent, about 5 minutes.
- Add the sliced carrot, zucchini, red bell pepper, and cubed potato to the pot. Stir and cook for another 5 minutes until the vegetables are slightly softened.
- Pour in the vegetable broth and add the green beans, saffron threads, chopped thyme, bay leaf, salt, and black pepper. Bring to a gentle boil.
- Reduce the heat to low, cover the pot, and let it simmer for 20 minutes until all the vegetables are tender.
- Remove the bay leaf and stir in the heavy cream or coconut cream. Adjust seasoning if needed and let it heat through for another 5 minutes.
- Serve hot, garnished with fresh parsley.
