Ingredients

  • White fish fillets (e.g., cod or haddock) - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Shallots - 2, finely chopped
  • Fennel bulb - 1, sliced
  • Tomatoes - 2, diced
  • Vegetable broth - 500 milliliters
  • Saffron threads - 1 pinch
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh thyme - 1 teaspoon, dried if unavailable
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, for serving

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the minced garlic and chopped shallots, and sauté until softened, about 3 minutes.
  2. Add the sliced fennel and diced tomatoes to the pot. Cook for an additional 5 minutes, stirring occasionally.
  3. Pour in the vegetable broth and add the saffron threads, parsley, thyme, salt, and black pepper. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to low and let the broth simmer for 10 minutes to allow the flavors to meld.
  5. Gently add the fish fillets to the pot and simmer for another 5-7 minutes, or until the fish is cooked through and flakes easily.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with additional parsley and a wedge of lemon on the side.
