  • Vegetable broth - 500 ml
  • Saffron threads - 1 pinch
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. Heat olive oil in a large pot over medium heat. Add sliced leek and minced garlic, sautéing until soft and fragrant, about 5 minutes.
  2. Add diced carrot, zucchini, and bell pepper to the pot. Cook for an additional 5 minutes, stirring occasionally.
  3. Stir in chopped tomatoes and cook for another 5 minutes until they soften.
  4. Pour in the vegetable broth, add saffron, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat to low and simmer for 20 minutes.
  5. After 20 minutes, remove the bay leaf and stir in fresh parsley and lemon juice. Adjust seasoning if necessary.
  6. Serve hot, garnished with extra parsley if desired.
