- Zucchini - 1 medium, diced
- Bell pepper - 1 medium, diced
- Fresh tomatoes - 2 medium, chopped
- Vegetable broth - 500 ml
- Saffron threads - 1 pinch
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Heat olive oil in a large pot over medium heat. Add sliced leek and minced garlic, sautéing until soft and fragrant, about 5 minutes.
- Add diced carrot, zucchini, and bell pepper to the pot. Cook for an additional 5 minutes, stirring occasionally.
- Stir in chopped tomatoes and cook for another 5 minutes until they soften.
- Pour in the vegetable broth, add saffron, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat to low and simmer for 20 minutes.
- After 20 minutes, remove the bay leaf and stir in fresh parsley and lemon juice. Adjust seasoning if necessary.
- Serve hot, garnished with extra parsley if desired.
