- Shallot - 1, finely chopped
- Leek - 1 small, sliced
- Carrot - 1 medium, diced
- Potatoes - 2 medium, diced
- Vegetable broth - 250ml
- Fresh parsley - 2 tablespoons, chopped
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Greek yogurt - 100g (for aioli)
- Additional garlic - 1 clove (for aioli)
- Salt - a pinch (for aioli)
Steps
- Preheat the oven to 180°C (350°F).
- In a large oven-proof dish, heat the olive oil over medium heat and sauté the minced garlic and chopped shallot until fragrant.
- Add the sliced leek and diced carrot, cooking for an additional 5 minutes until softened.
- Stir in the diced potatoes, followed by the vegetable broth, parsley, thyme, bay leaf, salt, and pepper. Bring to a gentle boil.
- Place the white fish fillets on top of the vegetable mixture, then drizzle with lemon juice and season with additional salt and pepper.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- While the dish is baking, prepare the garlic aioli by mixing the Greek yogurt with minced garlic and a pinch of salt in a small bowl.
- Remove the dish from the oven, discard the bay leaf, and serve hot with a dollop of garlic aioli on top.
