  • White fish fillets (e.g., cod, haddock) - 300g
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Shallot - 1, finely chopped
  • Leek - 1 small, sliced
  • Carrot - 1 medium, diced
  • Potatoes - 2 medium, diced
  • Vegetable broth - 250ml
  • Fresh parsley - 2 tablespoons, chopped
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Greek yogurt - 100g (for aioli)
  • Additional garlic - 1 clove (for aioli)
  • Salt - a pinch (for aioli)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large oven-proof dish, heat the olive oil over medium heat and sauté the minced garlic and chopped shallot until fragrant.
  3. Add the sliced leek and diced carrot, cooking for an additional 5 minutes until softened.
  4. Stir in the diced potatoes, followed by the vegetable broth, parsley, thyme, bay leaf, salt, and pepper. Bring to a gentle boil.
  5. Place the white fish fillets on top of the vegetable mixture, then drizzle with lemon juice and season with additional salt and pepper.
  6. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  7. While the dish is baking, prepare the garlic aioli by mixing the Greek yogurt with minced garlic and a pinch of salt in a small bowl.
  8. Remove the dish from the oven, discard the bay leaf, and serve hot with a dollop of garlic aioli on top.
