  • Carrots - 2, sliced
  • Celery - 2 stalks, chopped
  • Mushrooms - 250 grams, quartered
  • Potatoes - 200 grams, diced
  • Red wine - 250 ml
  • Vegetable broth - 250 ml
  • Tomato paste - 1 tablespoon
  • Fresh thyme - 2 sprigs
  • Bay leaf - 1
  • Soy sauce - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped shallots and sauté for about 3 minutes until they become translucent.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the sliced carrots and chopped celery, and cook for another 5 minutes until they begin to soften.
  5. Incorporate the quartered mushrooms and diced potatoes, cooking for 5-7 minutes until the mushrooms are browned.
  6. Pour in the red wine and vegetable broth, then stir in the tomato paste, thyme, bay leaf, soy sauce, salt, and pepper.
  7. Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 30-35 minutes, stirring occasionally.
  8. Once the vegetables are tender and the sauce has thickened, remove the bay leaf and adjust seasoning if necessary.
  9. Serve hot, garnished with fresh parsley.
