- Mushrooms - 250 grams, quartered
- Potatoes - 200 grams, diced
- Red wine - 250 ml
- Vegetable broth - 250 ml
- Tomato paste - 1 tablespoon
- Fresh thyme - 2 sprigs
- Bay leaf - 1
- Soy sauce - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped shallots and sauté for about 3 minutes until they become translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the sliced carrots and chopped celery, and cook for another 5 minutes until they begin to soften.
- Incorporate the quartered mushrooms and diced potatoes, cooking for 5-7 minutes until the mushrooms are browned.
- Pour in the red wine and vegetable broth, then stir in the tomato paste, thyme, bay leaf, soy sauce, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 30-35 minutes, stirring occasionally.
- Once the vegetables are tender and the sauce has thickened, remove the bay leaf and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
