- Seitan - 200 grams
- Medium onion - 1, chopped
- Carrots - 2, sliced
- Mushrooms - 150 grams, quartered
- Garlic - 2 cloves, minced
- Red wine - 250 ml (preferably Burgundy)
- Vegetable broth - 150 ml
- Olive oil - 2 tablespoons
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the sliced carrots and quartered mushrooms to the pot, cooking for about 5 minutes until they start to soften.
- Cut the seitan into bite-sized pieces and add it to the pot, stirring to combine.
- Pour in the red wine and vegetable broth, then add the bay leaf, thyme, salt, and black pepper. Bring the mixture to a simmer.
- Reduce the heat to low, cover the pot, and let it simmer for about 30 minutes, stirring occasionally.
- Remove the bay leaf, taste, and adjust seasoning if needed.
- Serve hot, garnished with fresh parsley.
