Ingredients

  • Seitan - 200 grams
  • Medium onion - 1, chopped
  • Carrots - 2, sliced
  • Mushrooms - 150 grams, quartered
  • Garlic - 2 cloves, minced
  • Red wine - 250 ml (preferably Burgundy)
  • Vegetable broth - 150 ml
  • Olive oil - 2 tablespoons
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the sliced carrots and quartered mushrooms to the pot, cooking for about 5 minutes until they start to soften.
  4. Cut the seitan into bite-sized pieces and add it to the pot, stirring to combine.
  5. Pour in the red wine and vegetable broth, then add the bay leaf, thyme, salt, and black pepper. Bring the mixture to a simmer.
  6. Reduce the heat to low, cover the pot, and let it simmer for about 30 minutes, stirring occasionally.
  7. Remove the bay leaf, taste, and adjust seasoning if needed.
  8. Serve hot, garnished with fresh parsley.
