Ingredients

  • Mushrooms (mixed, such as cremini and shiitake) - 300 grams, sliced
  • Red wine (preferably Burgundy) - 250 ml
  • Vegetable broth - 150 ml
  • Carrots - 2 medium, sliced
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh thyme - 1 teaspoon, chopped
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Cornstarch - 1 tablespoon (optional, for thickening)
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onions and sauté until they become translucent, about 5 minutes.
  2. Add the minced garlic and sliced carrots to the skillet, cooking for an additional 3-4 minutes until the carrots start to soften.
  3. Stir in the sliced mushrooms and cook until they release their moisture and begin to brown, about 6-8 minutes.
  4. Pour in the red wine and vegetable broth, and add the thyme, bay leaf, salt, and black pepper. Bring the mixture to a simmer.
  5. Reduce the heat to low and cover the skillet, allowing the bourguignon to simmer for 20 minutes, stirring occasionally.
  6. If you prefer a thicker sauce, mix the cornstarch with a small amount of water to create a slurry, then stir it into the skillet and cook for an additional 5 minutes until thickened.
  7. Remove the bay leaf and adjust seasoning if necessary. Serve the bourguignon hot, garnished with freshly chopped parsley.
