Ingredients

  • Pâte Sucrée (sweet pastry dough) - 200 grams
  • Pears (medium, ripe) - 2
  • Almond flour - 100 grams
  • Butter (unsalted, softened) - 80 grams
  • Sugar - 80 grams
  • Egg (large) - 1
  • Vanilla extract - 1 teaspoon
  • Almond extract - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Water - 500 ml
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Roll out the Pâte Sucrée to about 3mm thick and use it to line a 20cm tart pan, trimming the edges. Prick the base with a fork and chill in the fridge for 30 minutes.
  3. While the tart shell is chilling, prepare the poached pears. In a saucepan, combine water, sugar, and lemon juice. Bring to a simmer.
  4. Peel and halve the pears, removing the core. Add the pear halves to the simmering syrup and poach for about 10 minutes until just tender. Remove and let cool.
  5. In a mixing bowl, beat the softened butter and sugar until creamy. Add the egg, vanilla extract, and almond extract, mixing until well combined.
  6. Fold in the almond flour and a pinch of salt until the mixture is smooth.
  7. Take the tart shell from the fridge and spread the almond cream evenly over the base.
  8. Slice the poached pears and arrange them on top of the almond cream in the tart shell.
  9. Bake in the preheated oven for 25-30 minutes until the almond cream is set and lightly golden.
  10. Remove from the oven and allow to cool slightly before serving. Optionally, dust with powdered sugar before serving.
