- Bulgur wheat - 100 grams
- Water - 250 milliliters
- Olive oil - 1 tablespoon
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon (or to taste)
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the bulgur wheat under cold water and drain well.
- In a medium saucepan, bring 250 milliliters of water to a boil.
- Add the bulgur wheat to the boiling water, cover, and reduce the heat to low. Simmer for about 12-15 minutes until the water is absorbed and the bulgur is tender.
- While the bulgur is cooking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and sauté for 5 minutes until translucent.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the cumin, coriander, paprika, salt, and black pepper, cooking for an additional minute to toast the spices.
- Once the bulgur is cooked, fluff it with a fork and add it to the skillet with the sautéed onion and spices. Mix well to combine.
- Remove from heat and stir in the chopped parsley and lemon juice. Adjust seasoning if necessary.
- Serve warm as a side dish.
