- Yukon Gold potatoes - 500 grams
- Vegetable broth - 250 ml
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh thyme - 1 teaspoon, chopped
- Fresh rosemary - 1 teaspoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Wash and peel the Yukon Gold potatoes, then slice them into thin rounds, approximately 5 mm thick.
- In a large mixing bowl, combine the sliced potatoes with olive oil, minced garlic, fresh thyme, fresh rosemary, salt, and black pepper. Toss until the potatoes are well coated.
- In a baking dish, layer half of the seasoned potatoes evenly across the bottom.
- Pour half of the vegetable broth over the first layer of potatoes.
- Add the remaining potatoes on top, followed by the rest of the vegetable broth.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 40 minutes.
- After 40 minutes, remove the foil and bake for an additional 20 minutes, or until the potatoes are tender and golden brown on top.
- Remove from the oven and let it sit for a few minutes before serving.
