- Yukon Gold potatoes - 400 grams
- Onion - 1 medium, thinly sliced
- Garlic - 2 cloves, minced
- Vegetable broth - 300 ml
- Olive oil - 2 tablespoons
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Nutritional yeast - 2 tablespoons (optional for cheesy flavor)
Steps
- Preheat the oven to 180°C (350°F).
- Peel and thinly slice the Yukon Gold potatoes using a mandoline or a sharp knife.
- In a skillet, heat the olive oil over medium heat and sauté the sliced onion until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- In a baking dish, layer half of the sliced potatoes at the bottom, then add half of the sautéed onion and garlic mixture, and sprinkle with half of the thyme, salt, and pepper.
- Repeat the layers with the remaining potatoes, onion mixture, thyme, salt, and pepper.
- Pour the vegetable broth evenly over the layered potatoes.
- Cover the baking dish with aluminum foil and bake for 40 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the potatoes are tender and the top is golden.
- Let it cool for a few minutes before serving.
