- Zucchini - 1 medium, diced
- Potato - 1 medium, diced
- Tomatoes - 400 grams, diced (canned or fresh)
- Vegetable broth - 500 ml
- Saffron threads - a pinch
- Dried thyme - 1 teaspoon
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
- Lemon wedges - for serving
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
- Stir in the minced garlic, sliced leek, diced carrot, and diced celery. Sauté for another 5 minutes until the vegetables start to soften.
- Add the diced fennel, red bell pepper, zucchini, and potato to the pot. Cook for an additional 5 minutes, stirring occasionally.
- Pour in the diced tomatoes and vegetable broth. Stir in the saffron, dried thyme, bay leaf, salt, and black pepper.
- Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 20 minutes, or until all the vegetables are tender.
- Remove the bay leaf and adjust seasoning if necessary.
- Serve the bouillabaisse hot, garnished with fresh parsley and accompanied by lemon wedges.
