  • Tomatoes - 400 grams, diced (canned or fresh)
  • Vegetable broth - 500 ml
  • Saffron threads - a pinch
  • Dried thyme - 1 teaspoon
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish
  • Lemon wedges - for serving

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  2. Stir in the minced garlic, sliced leek, diced carrot, and diced celery. Sauté for another 5 minutes until the vegetables start to soften.
  3. Add the diced fennel, red bell pepper, zucchini, and potato to the pot. Cook for an additional 5 minutes, stirring occasionally.
  4. Pour in the diced tomatoes and vegetable broth. Stir in the saffron, dried thyme, bay leaf, salt, and black pepper.
  5. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 20 minutes, or until all the vegetables are tender.
  6. Remove the bay leaf and adjust seasoning if necessary.
  7. Serve the bouillabaisse hot, garnished with fresh parsley and accompanied by lemon wedges.
