- Leek - 1 medium, sliced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Zucchini - 1 medium, diced
- Red bell pepper - 1, diced
- Tomato - 1 large, chopped
- Saffron strands - 0.1 grams
- Vegetable broth - 500 ml
- White wine - 100 ml
- Fennel bulb - 1 small, sliced
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the sliced leek and sauté for about 3 minutes until softened.
- Stir in the minced garlic, diced carrot, and diced celery. Cook for an additional 5 minutes, stirring occasionally.
- Add the diced zucchini, red bell pepper, and chopped tomato to the pot. Cook for 5 more minutes until the vegetables start to soften.
- Dissolve the saffron strands in the white wine and pour it into the pot. Let it simmer for 2 minutes to allow the alcohol to evaporate.
- Pour in the vegetable broth and add the sliced fennel, bay leaf, dried thyme, salt, and black pepper. Bring the mixture to a boil.
- Reduce the heat to low and let it simmer for 20 minutes, uncovered, until all the vegetables are tender.
- Remove the bay leaf and stir in the chopped parsley just before serving.
- Serve hot, garnished with lemon wedges on the side.
