  • Leek - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1, diced
  • Tomato - 1 large, chopped
  • Saffron strands - 0.1 grams
  • Vegetable broth - 500 ml
  • White wine - 100 ml
  • Fennel bulb - 1 small, sliced
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the sliced leek and sauté for about 3 minutes until softened.
  2. Stir in the minced garlic, diced carrot, and diced celery. Cook for an additional 5 minutes, stirring occasionally.
  3. Add the diced zucchini, red bell pepper, and chopped tomato to the pot. Cook for 5 more minutes until the vegetables start to soften.
  4. Dissolve the saffron strands in the white wine and pour it into the pot. Let it simmer for 2 minutes to allow the alcohol to evaporate.
  5. Pour in the vegetable broth and add the sliced fennel, bay leaf, dried thyme, salt, and black pepper. Bring the mixture to a boil.
  6. Reduce the heat to low and let it simmer for 20 minutes, uncovered, until all the vegetables are tender.
  7. Remove the bay leaf and stir in the chopped parsley just before serving.
  8. Serve hot, garnished with lemon wedges on the side.
