Ingredients

  • White fish fillets (such as cod or haddock) - 150 grams
  • Shrimp - 100 grams, peeled and deveined
  • Mussels - 100 grams, cleaned
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fennel bulb - 1 small, thinly sliced
  • Saffron threads - a pinch
  • Paprika - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, cut into wedges
  • Salt - to taste
  • Black pepper - to taste
  • Skewers - 4 (if wooden, soaked in water for 30 minutes)

Steps

  1. In a mixing bowl, combine olive oil, minced garlic, saffron, paprika, salt, and black pepper to create a marinade.
  2. Cut the white fish into 2.5 cm cubes and add to the marinade, mixing well to coat. Let it marinate for 15 minutes.
  3. While the fish is marinating, prepare the skewers by threading the marinated fish, shrimp, mussels, and fennel slices alternately onto the skewers.
  4. Preheat the grill or barbecue to medium-high heat.
  5. Grill the skewers for about 8-10 minutes, turning occasionally, until the fish is opaque and the shrimp are pink and cooked through.
  6. Serve the skewers with fresh lemon wedges and a sprinkle of chopped parsley.
