- White fish fillets (such as cod or haddock) - 150 grams
- Shrimp - 100 grams, peeled and deveined
- Mussels - 100 grams, cleaned
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fennel bulb - 1 small, thinly sliced
- Saffron threads - a pinch
- Paprika - 1 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, cut into wedges
- Salt - to taste
- Black pepper - to taste
- Skewers - 4 (if wooden, soaked in water for 30 minutes)
Steps
- In a mixing bowl, combine olive oil, minced garlic, saffron, paprika, salt, and black pepper to create a marinade.
- Cut the white fish into 2.5 cm cubes and add to the marinade, mixing well to coat. Let it marinate for 15 minutes.
- While the fish is marinating, prepare the skewers by threading the marinated fish, shrimp, mussels, and fennel slices alternately onto the skewers.
- Preheat the grill or barbecue to medium-high heat.
- Grill the skewers for about 8-10 minutes, turning occasionally, until the fish is opaque and the shrimp are pink and cooked through.
- Serve the skewers with fresh lemon wedges and a sprinkle of chopped parsley.
