- Black pepper - 1/4 teaspoon
- Prawns - 150 grams, peeled and deveined
- White fish (e.g., cod or haddock) - 150 grams, cubed
- Mussels - 150 grams, cleaned
- Fresh parsley - 2 tablespoons, chopped
- Lemon wedges - for serving
Steps
- In a large pot, heat the olive oil over medium heat. Add the minced shallots and garlic, sautéing until fragrant and translucent, about 3 minutes.
- Add the sliced fennel and continue to cook for another 5 minutes, stirring occasionally.
- Stir in the diced tomatoes, fish stock, saffron, thyme, salt, and black pepper. Bring the mixture to a simmer and let cook for about 10 minutes to allow the flavors to meld.
- Add the prawns, cubed white fish, and mussels to the pot. Cover and cook for an additional 5-7 minutes, or until the mussels have opened and the seafood is cooked through.
- Remove from heat and stir in the chopped parsley. Serve hot with lemon wedges on the side.
