  • Fish stock - 500 ml

  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Prawns - 150 grams, peeled and deveined
  • White fish (e.g., cod or haddock) - 150 grams, cubed
  • Mussels - 150 grams, cleaned
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon wedges - for serving

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the minced shallots and garlic, sautéing until fragrant and translucent, about 3 minutes.
  2. Add the sliced fennel and continue to cook for another 5 minutes, stirring occasionally.
  3. Stir in the diced tomatoes, fish stock, saffron, thyme, salt, and black pepper. Bring the mixture to a simmer and let cook for about 10 minutes to allow the flavors to meld.
  4. Add the prawns, cubed white fish, and mussels to the pot. Cover and cook for an additional 5-7 minutes, or until the mussels have opened and the seafood is cooked through.
  5. Remove from heat and stir in the chopped parsley. Serve hot with lemon wedges on the side.
