- Black beans - 200 grams (cooked)
- Brown rice - 100 grams (cooked)
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Smoked paprika - 1 teaspoon
- Ground cumin - 1/2 teaspoon
- Soy sauce - 1 tablespoon
- Nutritional yeast - 2 tablespoons
- Olive oil - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Mushrooms - 150 grams, finely chopped
- Walnuts - 50 grams, chopped
- Flaxseed meal - 1 tablespoon
- Water - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 5 minutes.
- Add the finely chopped mushrooms to the skillet and cook for another 5-7 minutes until softened.
- In a large bowl, combine the cooked black beans, brown rice, sautéed onion and mushroom mixture, smoked paprika, ground cumin, soy sauce, nutritional yeast, chopped walnuts, flaxseed meal, and water. Mix until well combined.
- Season the mixture with salt and black pepper to taste, and fold in the chopped parsley.
- Transfer the mixture to a greased baking dish, pressing it down evenly.
- Bake in the preheated oven for 30-35 minutes, or until heated through and slightly crispy on top.
- Remove from the oven and let it cool for a few minutes before slicing into portions.
