Ingredients
- Black rice - 100 grams
- Beetroot - 100 grams, cooked and pureed
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Mushrooms - 100 grams, finely chopped
- Walnuts - 50 grams, chopped
- Soy sauce - 1 tablespoon
- Smoked paprika - 1 teaspoon
- Thyme - 1 teaspoon, dried
- Black pepper - to taste
- Vegan sausage casings (or grape leaves) - as needed
- Olive oil - 2 tablespoons
- Salt - to taste
Steps
- Rinse the black rice under cold water and cook it in a pot with 300ml of water. Bring to a boil, then reduce to a simmer, cover, and cook for 30 minutes or until tender. Drain excess water if necessary.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic and chopped mushrooms to the skillet. Sauté for another 5-7 minutes until the mushrooms are softened and browned.
- In a large bowl, combine the cooked black rice, pureed beetroot, sautéed onion and mushroom mixture, chopped walnuts, soy sauce, smoked paprika, thyme, and black pepper. Mix well until all ingredients are fully incorporated.
- Taste the mixture and adjust salt and pepper according to preference.
- Prepare the vegan sausage casings or grape leaves. If using casings, rinse them in water and soak them according to package instructions.
- Stuff the casings or leaves with the rice and beet mixture, twisting them at intervals to create sausage shapes. Ensure they are not packed too tightly to allow for expansion.
- Steam the stuffed casings for 15-20 minutes until heated through. If using grape leaves, place them in a pot with a little water and steam for the same duration.
- Remove from the steamer and let cool slightly before slicing. Serve warm with sautéed greens on the side.
