Ingredients

  • Boudin Noir (blood sausage) - 200 grams
  • Red onion - 1 medium, cut into wedges
  • Red bell pepper - 1 medium, cut into squares
  • Yellow squash - 1 small, cut into rounds
  • Olive oil - 2 tablespoons
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Dijon mustard - 2 tablespoons, for dipping

Steps

  1. Preheat your grill to medium heat.
  2. In a bowl, combine the olive oil, chopped thyme, salt, and black pepper. Add the onion, bell pepper, and squash, tossing to coat.
  3. Slice the boudin noir into 2 cm thick rounds.
  4. Assemble the skewers by alternating the boudin noir, red onion wedges, red bell pepper squares, and yellow squash rounds.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and the boudin noir is heated through and slightly crispy.
  6. Serve the skewers hot with Dijon mustard on the side for dipping.
