- Boudin Noir (blood sausage) - 200 grams
- Red onion - 1 medium, cut into wedges
- Red bell pepper - 1 medium, cut into squares
- Yellow squash - 1 small, cut into rounds
- Olive oil - 2 tablespoons
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Dijon mustard - 2 tablespoons, for dipping
Steps
- Preheat your grill to medium heat.
- In a bowl, combine the olive oil, chopped thyme, salt, and black pepper. Add the onion, bell pepper, and squash, tossing to coat.
- Slice the boudin noir into 2 cm thick rounds.
- Assemble the skewers by alternating the boudin noir, red onion wedges, red bell pepper squares, and yellow squash rounds.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and the boudin noir is heated through and slightly crispy.
- Serve the skewers hot with Dijon mustard on the side for dipping.
