- Fresh thyme - 1 teaspoon, chopped
- Salt - to taste

Steps
- Heat the olive oil and half of the butter in a large skillet over medium heat.
- Add the sliced onions and cook until they become translucent and slightly caramelized, about 5-7 minutes.
- Add the sliced apples to the skillet and continue to cook, stirring occasionally, until they are tender and golden, about 5-7 minutes.
- Season the apple and onion mixture with fresh thyme, salt, and black pepper. Remove from the skillet and set aside.
- In the same skillet, add the remaining butter and increase the heat to medium-high.
- Slice the boudin noir into 1 cm thick rounds and place them in the skillet.
- Cook for about 3-4 minutes on each side until they are browned and heated through.
- Serve the boudin noir topped with the sautéed apple and onion mixture.
