Ingredients

  • lean pork shoulder - 250 grams
  • pork blood - 100 ml
  • onion - 1 medium, finely chopped
  • garlic - 2 cloves, minced
  • black pepper - 1 teaspoon
  • salt - 1 teaspoon
  • thyme - 1 teaspoon, dried
  • nutmeg - 1/4 teaspoon
  • cooked brown rice - 50 grams
  • olive oil - 1 tablespoon
  • apples - 2 medium, sliced
  • cinnamon - 1/2 teaspoon
  • lemon juice - 1 tablespoon

Steps

  1. In a large bowl, mix the ground pork shoulder, pork blood, onion, garlic, black pepper, salt, thyme, nutmeg, and cooked brown rice until well combined.
  2. Stuff the mixture into sausage casings (or form into patties if casings are not available).
  3. Twist the sausages into links and tie off the ends or keep the patties aside.
  4. In a skillet, heat olive oil over medium heat, and cook the sausages for about 20 minutes, turning occasionally until browned and cooked through.
  5. While the sausages are cooking, heat another skillet over medium heat and add the sliced apples, cinnamon, and lemon juice. Sauté until the apples are soft and caramelized, about 10 minutes.
  6. Serve the Boudin Noir hot alongside the sautéed apples.
