Ingredients

  • Cod fillet - 300 grams
  • Potato - 100 grams
  • Garlic - 2 cloves
  • Fresh parsley - 2 tablespoons, chopped
  • Egg - 1 large
  • Milk - 50 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutmeg - a pinch
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Poach the cod fillet in simmering salted water for about 10 minutes until cooked through. Drain and let it cool.
  2. Peel and boil the potato in salted water until tender, about 15 minutes. Drain and mash until smooth.
  3. In a food processor, combine the poached cod, garlic, parsley, egg, milk, salt, pepper, and nutmeg. Blend until smooth and well combined.
  4. In a large bowl, mix the cod mixture with the mashed potato until fully incorporated.
  5. Form the mixture into sausage shapes, about 4-5 cm long.
  6. Heat olive oil in a pan over medium heat. Cook the boudins for about 4-5 minutes on each side until golden brown.
