- Cod fillet - 300 grams
- Potato - 100 grams
- Garlic - 2 cloves
- Fresh parsley - 2 tablespoons, chopped
- Egg - 1 large
- Milk - 50 ml
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Nutmeg - a pinch
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Poach the cod fillet in simmering salted water for about 10 minutes until cooked through. Drain and let it cool.
- Peel and boil the potato in salted water until tender, about 15 minutes. Drain and mash until smooth.
- In a food processor, combine the poached cod, garlic, parsley, egg, milk, salt, pepper, and nutmeg. Blend until smooth and well combined.
- In a large bowl, mix the cod mixture with the mashed potato until fully incorporated.
- Form the mixture into sausage shapes, about 4-5 cm long.
- Heat olive oil in a pan over medium heat. Cook the boudins for about 4-5 minutes on each side until golden brown.
