Ingredients

  • Cauliflower - 200 grams
  • Potato - 150 grams
  • Carrot - 100 grams
  • Onion - 50 grams
  • Garlic - 2 cloves
  • Fresh parsley - 30 grams
  • Almond milk - 100 ml
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Vegetable broth - 200 ml
  • Miso paste - 1 tablespoon
  • Panko breadcrumbs - 50 grams
  • Flour - 30 grams
  • Egg replacer (or flaxseed meal) - 1 tablespoon

Steps

  1. Steam the cauliflower, potato, and carrot until tender, about 15-20 minutes.
  2. While the vegetables are steaming, finely chop the onion and garlic, then sauté them in olive oil over medium heat until translucent.
  3. Once the vegetables are steamed, transfer them to a mixing bowl and mash them together until smooth.
  4. Add the sautéed onion and garlic, almond milk, miso paste, salt, black pepper, nutmeg, and chopped parsley to the mashed vegetables. Mix until well combined.
  5. In a separate bowl, combine panko breadcrumbs and flour. Add the egg replacer or flaxseed meal mixed with water to the vegetable mixture to bind it.
  6. Form the mixture into sausage shapes, then roll them in the panko breadcrumb mixture to coat evenly.
  7. Heat a non-stick skillet over medium heat with a little olive oil and cook the boudin blanc végétal for about 4-5 minutes on each side until golden brown.
  8. Serve hot with a side of fresh salad or lightly toasted bread.
