- Boudin blanc sausages - 2 pieces (approximately 200g)
- Apples (preferably Granny Smith) - 2 medium (about 300g)
- Olive oil - 1 tablespoon (15ml)
- Shallot - 1 medium, finely chopped
- Fresh thyme - 2 sprigs, leaves only
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon (15ml)
Steps
- Peel, core, and slice the apples into wedges.
- In a skillet, heat the olive oil over medium heat and add the chopped shallot. Sauté for 2-3 minutes until softened.
- Add the apple wedges to the skillet and sprinkle with salt, black pepper, and thyme leaves. Cook for about 5-7 minutes, stirring occasionally, until the apples are tender and lightly caramelized.
- While the apples are cooking, in a separate pan, heat a little olive oil over medium heat and add the boudin blanc sausages. Cook for about 8-10 minutes, turning occasionally until golden brown and heated through.
- Once cooked, remove the sausages from the heat and let them rest for a couple of minutes. Drizzle with lemon juice.
- Serve the boudin blanc on a plate with the caramelized apples alongside.
