  • Boudin blanc sausages - 2 pieces (approximately 200g)
  • Apples (preferably Granny Smith) - 2 medium (about 300g)
  • Olive oil - 1 tablespoon (15ml)
  • Shallot - 1 medium, finely chopped
  • Fresh thyme - 2 sprigs, leaves only
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon (15ml)

Steps

  1. Peel, core, and slice the apples into wedges.
  2. In a skillet, heat the olive oil over medium heat and add the chopped shallot. Sauté for 2-3 minutes until softened.
  3. Add the apple wedges to the skillet and sprinkle with salt, black pepper, and thyme leaves. Cook for about 5-7 minutes, stirring occasionally, until the apples are tender and lightly caramelized.
  4. While the apples are cooking, in a separate pan, heat a little olive oil over medium heat and add the boudin blanc sausages. Cook for about 8-10 minutes, turning occasionally until golden brown and heated through.
  5. Once cooked, remove the sausages from the heat and let them rest for a couple of minutes. Drizzle with lemon juice.
  6. Serve the boudin blanc on a plate with the caramelized apples alongside.
