Ingredients

  • Chicken breast - 200 grams
  • Pork fatback - 100 grams
  • Milk - 100 ml
  • Egg - 1 large
  • Shallot - 1 medium, finely chopped
  • Garlic - 1 clove, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Nutmeg - 1/4 teaspoon, grated
  • Salt - 1 teaspoon
  • White pepper - 1/2 teaspoon
  • Gluten-free sausage casings - 2 meters

Steps

  1. In a food processor, combine the chicken breast and pork fatback until finely minced.
  2. Add the milk, egg, shallot, garlic, thyme, nutmeg, salt, and white pepper to the minced meat and blend until smooth.
  3. Rinse the gluten-free sausage casings under cold water and soak them in warm water for 30 minutes.
  4. Stuff the sausage mixture into the casings, twisting every 10 cm to form individual sausages. Tie the ends securely.
  5. Bring a pot of water to a gentle simmer. Poach the sausages for 20 minutes, ensuring the water does not boil.
  6. Remove the sausages from the water and cool them in an ice bath for 5 minutes.
  7. Heat a skillet over medium heat and cook the sausages for 5-7 minutes until golden brown on all sides.
  8. Serve warm with sautéed apples or your choice of breakfast sides.
