Ingredients

  • Almond flour - 100 grams
  • Butter - 50 grams
  • Egg - 1 large
  • Chicken breast - 150 grams, cooked and diced
  • Mushrooms - 100 grams, diced
  • Heavy cream - 100 ml
  • Grated Parmesan cheese - 30 grams
  • Garlic - 1 clove, minced
  • Thyme - 1 teaspoon, fresh or dried
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, melted butter, salt, and egg to form a dough.
  3. Press the dough into mini tartlet molds (approximately 6-8) to create a shell. Poke holes in the bottom with a fork.
  4. Bake the crusts in the preheated oven for about 10-12 minutes or until golden brown. Remove and let them cool.
  5. In a skillet over medium heat, add a little butter and sauté the minced garlic and diced mushrooms until softened (about 5 minutes).
  6. Add the cooked chicken, thyme, salt, and pepper to the skillet, stirring well to combine.
  7. Pour in the heavy cream and let the mixture simmer for 3-4 minutes until it thickens slightly.
  8. Stir in the grated Parmesan cheese until melted and fully incorporated into the mixture.
  9. Fill each almond flour shell with the chicken and mushroom mixture, then place them back in the oven for 5 more minutes to warm through.
