- Red bell pepper - 2 medium
- Quinoa - 100 grams
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Garlic - 1 clove, minced
- Olive oil - 1 tablespoon
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Rinse the quinoa under cold water, then cook it according to package instructions (approximately 15 minutes).
- While the quinoa is cooking, slice the bell peppers in half lengthwise and remove the seeds and membranes.
- Place the bell pepper halves on a baking sheet, drizzle with olive oil, and sprinkle with salt and black pepper.
- Roast the peppers in the preheated oven for about 15 minutes, or until they are tender.
- In a mixing bowl, combine the cooked quinoa, crumbled feta cheese, chopped parsley, minced garlic, lemon juice, and adjust seasoning with salt and pepper if needed.
- Once the peppers are done roasting, remove them from the oven and carefully spoon the quinoa mixture into each bell pepper half.
- Return the stuffed peppers to the oven and bake for an additional 10 minutes.
- Serve warm as a delicious and healthy snack.
