Ingredients

  • Red bell pepper - 2 medium
  • Quinoa - 100 grams
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Rinse the quinoa under cold water, then cook it according to package instructions (approximately 15 minutes).
  3. While the quinoa is cooking, slice the bell peppers in half lengthwise and remove the seeds and membranes.
  4. Place the bell pepper halves on a baking sheet, drizzle with olive oil, and sprinkle with salt and black pepper.
  5. Roast the peppers in the preheated oven for about 15 minutes, or until they are tender.
  6. In a mixing bowl, combine the cooked quinoa, crumbled feta cheese, chopped parsley, minced garlic, lemon juice, and adjust seasoning with salt and pepper if needed.
  7. Once the peppers are done roasting, remove them from the oven and carefully spoon the quinoa mixture into each bell pepper half.
  8. Return the stuffed peppers to the oven and bake for an additional 10 minutes.
  9. Serve warm as a delicious and healthy snack.
