- Beef sirloin - 250 grams, thinly sliced
- Mushrooms - 150 grams, sliced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Dijon mustard - 1 tablespoon
- Soy sauce (kosher) - 1 tablespoon
- Beef broth - 200 ml
- Sour cream - 100 grams
- Cornstarch - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
- Egg noodles - 150 grams
Steps
- In a large pot, bring salted water to a boil and cook the egg noodles according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sliced mushrooms to the skillet, cooking until the mushrooms are golden brown, about 5-7 minutes.
- Push the mushroom mixture to one side of the skillet and add the sliced beef to the other side. Cook the beef for 2-3 minutes, stirring occasionally until browned.
- Stir in the Dijon mustard and soy sauce, mixing well with the beef and mushrooms.
- Pour in the beef broth and bring the mixture to a simmer. Allow it to cook for about 5 minutes.
- In a small bowl, mix cornstarch with a tablespoon of water to create a slurry. Add this to the skillet, stirring until the sauce thickens, about 2 minutes.
- Reduce the heat to low and stir in the sour cream until well incorporated. Season with salt and black pepper to taste.
- Serve the beef stroganoff over the cooked egg noodles and garnish with freshly chopped parsley.
