Ingredients

  • Beef sirloin - 250 grams, thinly sliced
  • Mushrooms - 150 grams, sliced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Dijon mustard - 1 tablespoon
  • Soy sauce (kosher) - 1 tablespoon
  • Beef broth - 200 ml
  • Sour cream - 100 grams
  • Cornstarch - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish
  • Egg noodles - 150 grams

Steps

  1. In a large pot, bring salted water to a boil and cook the egg noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sliced mushrooms to the skillet, cooking until the mushrooms are golden brown, about 5-7 minutes.
  4. Push the mushroom mixture to one side of the skillet and add the sliced beef to the other side. Cook the beef for 2-3 minutes, stirring occasionally until browned.
  5. Stir in the Dijon mustard and soy sauce, mixing well with the beef and mushrooms.
  6. Pour in the beef broth and bring the mixture to a simmer. Allow it to cook for about 5 minutes.
  7. In a small bowl, mix cornstarch with a tablespoon of water to create a slurry. Add this to the skillet, stirring until the sauce thickens, about 2 minutes.
  8. Reduce the heat to low and stir in the sour cream until well incorporated. Season with salt and black pepper to taste.
  9. Serve the beef stroganoff over the cooked egg noodles and garnish with freshly chopped parsley.
