Ingredients

  • Beef steak (sirloin or ribeye) - 300 grams
  • Olive oil - 3 tablespoons
  • Garlic cloves - 2, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh rosemary - 1 teaspoon, chopped
  • Dried oregano - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 200 grams, halved
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, sliced
  • Balsamic vinegar - 1 tablespoon
  • Fresh basil - 2 tablespoons, chopped

Steps

  1. In a mixing bowl, combine olive oil, minced garlic, thyme, rosemary, oregano, salt, and black pepper to create a marinade.
  2. Add the beef steak to the marinade, ensuring it is well-coated. Cover and refrigerate for at least 15 minutes.
  3. While the beef marinates, prepare the vegetables by tossing cherry tomatoes, zucchini, and bell pepper in a bowl with balsamic vinegar, salt, and pepper.
  4. Preheat the grill to medium-high heat.
  5. Remove the beef from the marinade and let it rest at room temperature for 5 minutes.
  6. Grill the beef for about 4-5 minutes per side for medium-rare, or until your desired doneness is achieved.
  7. During the last few minutes of grilling, place the marinated vegetables on the grill. Cook for about 5-7 minutes, turning occasionally until tender and slightly charred.
  8. Once cooked, remove the beef and vegetables from the grill and let the beef rest for 5 minutes before slicing.
  9. Serve the sliced beef with the grilled vegetables, garnished with fresh basil.
