Ingredients

  • Lean beef chuck - 300 grams
  • Carrots - 2 medium, sliced
  • Onion - 1 medium, chopped
  • Celery - 1 stalk, chopped
  • Garlic - 2 cloves, minced
  • Red wine - 100 ml (optional for flavor)
  • Beef broth - 250 ml
  • Fresh thyme - 1 teaspoon
  • Bay leaf - 1
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Heat the olive oil in a large Dutch oven or heavy pot over medium heat.
  2. Season the beef chuck with salt and black pepper, then brown it on all sides in the pot, about 5-7 minutes.
  3. Remove the beef from the pot and set aside. In the same pot, add the onion, carrots, celery, and garlic, and sauté for about 5 minutes until softened.
  4. Pour in the red wine (if using) to deglaze the pot, scraping up any browned bits, and let it simmer for 2-3 minutes.
  5. Return the beef to the pot, then add the beef broth, thyme, and bay leaf.
  6. Bring to a boil, then reduce the heat to low, cover, and let simmer for about 1.5 hours, or until the beef is tender.
  7. Remove the beef and vegetables from the pot. Discard the bay leaf and adjust seasoning to taste.
  8. Slice the beef and serve with the vegetables and some of the cooking liquid.
