Ingredients
- Lean beef chuck - 300 grams
- Carrots - 2 medium, sliced
- Onion - 1 medium, chopped
- Celery - 1 stalk, chopped
- Garlic - 2 cloves, minced
- Red wine - 100 ml (optional for flavor)
- Beef broth - 250 ml
- Fresh thyme - 1 teaspoon
- Bay leaf - 1
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Heat the olive oil in a large Dutch oven or heavy pot over medium heat.
- Season the beef chuck with salt and black pepper, then brown it on all sides in the pot, about 5-7 minutes.
- Remove the beef from the pot and set aside. In the same pot, add the onion, carrots, celery, and garlic, and sauté for about 5 minutes until softened.
- Pour in the red wine (if using) to deglaze the pot, scraping up any browned bits, and let it simmer for 2-3 minutes.
- Return the beef to the pot, then add the beef broth, thyme, and bay leaf.
- Bring to a boil, then reduce the heat to low, cover, and let simmer for about 1.5 hours, or until the beef is tender.
- Remove the beef and vegetables from the pot. Discard the bay leaf and adjust seasoning to taste.
- Slice the beef and serve with the vegetables and some of the cooking liquid.
