- Halal beef chuck - 400 grams, cut into 3 cm cubes
- Red wine (halal) - 250 ml
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, sliced
- Celery - 1 stalk, chopped
- Tomato paste - 1 tablespoon
- Fresh thyme - 2 sprigs
- Bay leaf - 1
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Beef broth - 250 ml
- Button mushrooms - 100 grams, sliced
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- In a large Dutch oven or heavy pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté until softened, about 5-7 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Increase the heat to medium-high and add the pieces of halal beef. Brown the meat on all sides, approximately 8-10 minutes.
- Stir in the tomato paste and cook for an additional 2 minutes, ensuring the beef is well coated.
- Pour in the red wine and bring the mixture to a simmer, scraping the bottom of the pot to release any browned bits.
- Add the beef broth, thyme, bay leaf, salt, and black pepper. Stir well to combine.
- Cover the pot and reduce the heat to low, allowing the stew to simmer for about 1.5 hours, or until the beef is tender.
- In the last 30 minutes of cooking, add the sliced mushrooms to the pot and stir.
- Once the beef is tender, taste and adjust seasoning if necessary. Remove the thyme sprigs and bay leaf before serving.
- Serve hot, garnished with chopped parsley.
