Ingredients

  • Halal beef chuck - 400 grams, cut into 3 cm cubes
  • Red wine (halal) - 250 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Celery - 1 stalk, chopped
  • Tomato paste - 1 tablespoon
  • Fresh thyme - 2 sprigs
  • Bay leaf - 1
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Beef broth - 250 ml
  • Button mushrooms - 100 grams, sliced
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. In a large Dutch oven or heavy pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté until softened, about 5-7 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Increase the heat to medium-high and add the pieces of halal beef. Brown the meat on all sides, approximately 8-10 minutes.
  4. Stir in the tomato paste and cook for an additional 2 minutes, ensuring the beef is well coated.
  5. Pour in the red wine and bring the mixture to a simmer, scraping the bottom of the pot to release any browned bits.
  6. Add the beef broth, thyme, bay leaf, salt, and black pepper. Stir well to combine.
  7. Cover the pot and reduce the heat to low, allowing the stew to simmer for about 1.5 hours, or until the beef is tender.
  8. In the last 30 minutes of cooking, add the sliced mushrooms to the pot and stir.
  9. Once the beef is tender, taste and adjust seasoning if necessary. Remove the thyme sprigs and bay leaf before serving.
  10. Serve hot, garnished with chopped parsley.
