  • Red wine (optional) - 50 ml
  • Olive oil - 2 tablespoons
  • Fresh thyme - 2 sprigs
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Increase the heat to medium-high and add the beef pieces, browning them on all sides.
  4. Once the beef is browned, add the sliced carrots, thyme, bay leaf, salt, and black pepper.
  5. Pour in the beef broth and red wine (if using), bringing the mixture to a boil.
  6. Reduce the heat to low, cover the pot, and let it simmer for about 60 minutes, or until the beef is tender.
  7. Stir occasionally and add more broth if necessary to keep the mixture from drying out.
  8. Remove the bay leaf and thyme sprigs before serving.
