Ingredients

  • Beef sirloin - 300 grams
  • Red wine (preferably Burgundy) - 120 ml
  • Beef broth - 60 ml
  • Carrot - 1 medium, sliced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Bay leaf - 1
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Mushrooms - 100 grams, sliced
  • Fresh parsley - for garnish

Steps

  1. In a bowl, combine the red wine, beef broth, thyme, bay leaf, salt, and black pepper. Add the beef sirloin and marinate for at least 30 minutes.
  2. Heat olive oil in a pan over medium heat. Sauté the onions and garlic until translucent, about 3-4 minutes.
  3. Add the sliced carrots and mushrooms to the pan, cooking for another 5 minutes until tender.
  4. Remove the beef from the marinade and pat it dry. Reserve the marinade for later use.
  5. Preheat your grill to medium-high heat. Grill the beef sirloin for about 4-5 minutes on each side for medium-rare, basting with the reserved marinade during cooking.
  6. Once cooked to your liking, let the beef rest for 5 minutes before slicing.
  7. Serve the sliced beef topped with the sautéed vegetables and garnish with fresh parsley.
