Ingredients

  • Beef chuck roast - 400 grams, cut into 3 cm cubes
  • Red wine (dry) - 200 ml
  • Beef broth - 100 ml
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Fresh thyme - 2 sprigs
  • Bay leaf - 1
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Mushrooms - 150 grams, quartered
  • Bacon - 100 grams, chopped
  • Carrots - 100 grams, sliced
  • Onion - 1 medium, diced
  • Cauliflower - 200 grams, for serving

Steps

  1. In a large bowl, combine the beef cubes with red wine, garlic, thyme, bay leaf, salt, and black pepper. Let marinate for at least 30 minutes, preferably overnight in the refrigerator.
  2. In a heavy-bottomed pot, heat 1 tablespoon of olive oil over medium heat. Add the bacon and cook until crispy, then remove and set aside.
  3. In the same pot, add the beef cubes (reserve the marinade) and sear on all sides until browned. Remove and set aside.
  4. Add the remaining olive oil, onions, and carrots to the pot, cooking until softened, about 5 minutes.
  5. Stir in the mushrooms and cook for an additional 3 minutes. Add the reserved marinade and beef broth, scraping the bottom of the pot to deglaze.
  6. Return the beef and bacon to the pot, bring to a simmer, then cover and cook on low heat for 1 hour, until the beef is tender.
  7. Preheat the BBQ grill to medium-high heat. Once the beef is tender, remove it from the pot and place it on the grill for about 5-7 minutes to add a smoky flavor.
  8. Meanwhile, steam the cauliflower until tender, about 10 minutes. Blend or mash with a bit of salt and pepper for a low-carb alternative to mashed potatoes.
  9. Serve the grilled beef Bourguignon over the cauliflower mash, drizzling some sauce from the pot over the top.
