- Beef broth - 100 ml
- Carrots - 2 medium, sliced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Fresh thyme - 2 sprigs
- Bay leaf - 1
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Gluten-free flour - 1 tablespoon (optional for thickening)
- Mushrooms - 150 grams, quartered
- Fresh parsley - for garnish
Steps
- In a bowl, marinate the beef cubes with red wine, garlic, thyme, bay leaf, salt, and pepper for at least 1 hour (or overnight for best results).
- Preheat your BBQ grill to medium heat.
- In a cast-iron pot or grill-safe pan, heat the olive oil over medium heat on the BBQ.
- Remove the beef from the marinade, reserving the marinade, and brown the beef cubes in the hot oil for about 5 minutes, turning to brown all sides.
- Add the chopped onions and sliced carrots to the pot and cook for an additional 5 minutes until softened.
- Pour in the reserved marinade and beef broth, stirring to combine. Bring to a gentle simmer.
- If desired, sprinkle gluten-free flour over the mixture to thicken, stirring well.
- Add the quartered mushrooms and let the stew simmer on the BBQ for about 2-2.5 hours, or until the beef is tender and the flavors meld together, occasionally stirring.
- Remove from heat, discard the bay leaf and thyme sprigs, and garnish with fresh parsley before serving.
