  • Beef broth - 100 ml
  • Carrots - 2 medium, sliced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Fresh thyme - 2 sprigs
  • Bay leaf - 1
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Gluten-free flour - 1 tablespoon (optional for thickening)
  • Mushrooms - 150 grams, quartered
  • Fresh parsley - for garnish

Steps

  1. In a bowl, marinate the beef cubes with red wine, garlic, thyme, bay leaf, salt, and pepper for at least 1 hour (or overnight for best results).
  2. Preheat your BBQ grill to medium heat.
  3. In a cast-iron pot or grill-safe pan, heat the olive oil over medium heat on the BBQ.
  4. Remove the beef from the marinade, reserving the marinade, and brown the beef cubes in the hot oil for about 5 minutes, turning to brown all sides.
  5. Add the chopped onions and sliced carrots to the pot and cook for an additional 5 minutes until softened.
  6. Pour in the reserved marinade and beef broth, stirring to combine. Bring to a gentle simmer.
  7. If desired, sprinkle gluten-free flour over the mixture to thicken, stirring well.
  8. Add the quartered mushrooms and let the stew simmer on the BBQ for about 2-2.5 hours, or until the beef is tender and the flavors meld together, occasionally stirring.
  9. Remove from heat, discard the bay leaf and thyme sprigs, and garnish with fresh parsley before serving.
