Ingredients

  • lean beef (chuck or sirloin) - 300 grams, cut into 2.5 cm cubes
  • red wine (preferably Burgundy) - 200 ml
  • low-sodium beef broth - 150 ml
  • carrots - 2 medium, sliced
  • onion - 1 medium, diced
  • garlic - 2 cloves, minced
  • mushrooms - 150 grams, quartered
  • fresh thyme - 2 sprigs
  • bay leaf - 1
  • olive oil - 1 tablespoon
  • whole wheat flour - 1 tablespoon
  • salt - to taste
  • black pepper - to taste
  • fresh parsley - for garnish

Steps

  1. Heat olive oil in a large pot over medium heat. Add the beef cubes and brown them on all sides, about 5-7 minutes. Remove the beef and set aside.
  2. In the same pot, add the diced onion, sliced carrots, and minced garlic. Sauté for 5 minutes until the vegetables are softened.
  3. Sprinkle the flour over the vegetables, stirring to combine, and cook for an additional 2 minutes.
  4. Return the beef to the pot and pour in the red wine and beef broth. Add the thyme, bay leaf, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1 hour.
  6. After 1 hour, add the quartered mushrooms, stir well, and continue to simmer for another 30 minutes until the beef is tender.
  7. Remove the bay leaf and thyme sprigs before serving. Garnish with fresh parsley.
