- lean beef (chuck or sirloin) - 300 grams, cut into 2.5 cm cubes
- red wine (preferably Burgundy) - 200 ml
- low-sodium beef broth - 150 ml
- carrots - 2 medium, sliced
- onion - 1 medium, diced
- garlic - 2 cloves, minced
- mushrooms - 150 grams, quartered
- fresh thyme - 2 sprigs
- bay leaf - 1
- olive oil - 1 tablespoon
- whole wheat flour - 1 tablespoon
- salt - to taste
- black pepper - to taste
- fresh parsley - for garnish
Steps
- Heat olive oil in a large pot over medium heat. Add the beef cubes and brown them on all sides, about 5-7 minutes. Remove the beef and set aside.
- In the same pot, add the diced onion, sliced carrots, and minced garlic. Sauté for 5 minutes until the vegetables are softened.
- Sprinkle the flour over the vegetables, stirring to combine, and cook for an additional 2 minutes.
- Return the beef to the pot and pour in the red wine and beef broth. Add the thyme, bay leaf, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1 hour.
- After 1 hour, add the quartered mushrooms, stir well, and continue to simmer for another 30 minutes until the beef is tender.
- Remove the bay leaf and thyme sprigs before serving. Garnish with fresh parsley.
