- Beef chuck - 300 grams, cut into 2.5 cm cubes
- Carrots - 200 grams, sliced into rounds
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Tomato paste - 1 tablespoon
- Beef broth - 250 ml
- Red wine (Halal) - 100 ml
- Olive oil - 2 tablespoons
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the chopped onion and garlic, and sauté until they are translucent, about 5 minutes.
- Increase the heat to medium-high and add the beef cubes. Brown the meat on all sides, about 5-7 minutes.
- Stir in the tomato paste, cooking for another 2 minutes to caramelize it slightly.
- Pour in the red wine, scraping the bottom of the pot to deglaze, and let it simmer for about 2 minutes.
- Add the beef broth, sliced carrots, thyme, bay leaf, and season with salt and black pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 1.5 hours until the beef is tender.
- Once cooked, remove the bay leaf and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
