Ingredients

  • Beef chuck - 300 grams, cut into 2.5 cm cubes
  • Carrots - 200 grams, sliced into rounds
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 1 tablespoon
  • Beef broth - 250 ml
  • Red wine (Halal) - 100 ml
  • Olive oil - 2 tablespoons
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and garlic, and sauté until they are translucent, about 5 minutes.
  3. Increase the heat to medium-high and add the beef cubes. Brown the meat on all sides, about 5-7 minutes.
  4. Stir in the tomato paste, cooking for another 2 minutes to caramelize it slightly.
  5. Pour in the red wine, scraping the bottom of the pot to deglaze, and let it simmer for about 2 minutes.
  6. Add the beef broth, sliced carrots, thyme, bay leaf, and season with salt and black pepper.
  7. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 1.5 hours until the beef is tender.
  8. Once cooked, remove the bay leaf and adjust seasoning if necessary.
  9. Serve hot, garnished with fresh parsley.
