Ingredients

  • buckwheat flour - 100 grams
  • all-purpose flour - 50 grams
  • milk - 250 ml
  • water - 100 ml
  • eggs - 1 large
  • salt - 1/2 teaspoon
  • baking powder - 1 teaspoon
  • olive oil - 2 tablespoons
  • ricotta cheese - 100 grams
  • fresh chives - 10 grams
  • fresh dill - 10 grams
  • lemon zest - 1 teaspoon
  • black pepper - to taste

Steps

  1. In a mixing bowl, combine the buckwheat flour, all-purpose flour, salt, and baking powder.
  2. In another bowl, whisk together the milk, water, and egg until well combined.
  3. Pour the wet ingredients into the dry ingredients and mix until smooth and homogeneous. Let the batter rest for 10 minutes.
  4. Meanwhile, finely chop the fresh chives and dill, then mix them with the ricotta cheese, lemon zest, and a pinch of black pepper in a small bowl. Set aside.
  5. Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  6. Pour a ladleful of batter into the skillet, forming small pancakes (about 10 cm in diameter). Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2 minutes until golden brown.
  7. Repeat with the remaining batter, adding more oil to the skillet as needed.
  8. Serve the blinis warm, topped with the herbed ricotta mixture.
