- buckwheat flour - 100 grams
- all-purpose flour - 50 grams
- milk - 250 ml
- water - 100 ml
- eggs - 1 large
- salt - 1/2 teaspoon
- baking powder - 1 teaspoon
- olive oil - 2 tablespoons
- ricotta cheese - 100 grams
- fresh chives - 10 grams
- fresh dill - 10 grams
- lemon zest - 1 teaspoon
- black pepper - to taste
Steps
- In a mixing bowl, combine the buckwheat flour, all-purpose flour, salt, and baking powder.
- In another bowl, whisk together the milk, water, and egg until well combined.
- Pour the wet ingredients into the dry ingredients and mix until smooth and homogeneous. Let the batter rest for 10 minutes.
- Meanwhile, finely chop the fresh chives and dill, then mix them with the ricotta cheese, lemon zest, and a pinch of black pepper in a small bowl. Set aside.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
- Pour a ladleful of batter into the skillet, forming small pancakes (about 10 cm in diameter). Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2 minutes until golden brown.
- Repeat with the remaining batter, adding more oil to the skillet as needed.
- Serve the blinis warm, topped with the herbed ricotta mixture.
