- beetroot - 150 grams, cooked and peeled
- all-purpose flour - 100 grams
- plant-based milk - 150 ml
- flaxseed meal - 1 tablespoon
- water - 2 tablespoons
- baking powder - 1 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- olive oil - for cooking
- fresh dill - for garnish
Steps
- In a small bowl, mix the flaxseed meal with water and let it sit for about 5 minutes to create a flax egg.
- In a blender, combine the cooked beetroot, plant-based milk, and the flax egg, and blend until smooth.
- In a mixing bowl, whisk together the all-purpose flour, baking powder, salt, and black pepper.
- Gradually pour the beetroot mixture into the dry ingredients, stirring until just combined.
- Heat a non-stick skillet over medium heat and lightly coat with olive oil.
- Pour 1/4 cup of the batter onto the skillet for each blini, cooking for about 2-3 minutes on one side until bubbles form, then flip and cook for another 2 minutes on the other side.
- Repeat until all the batter is used, adding more oil as needed.
- Serve warm, garnished with fresh dill and a drizzle of your favorite vegan sauce.
