Ingredients

  • beetroot - 150 grams, cooked and peeled
  • all-purpose flour - 100 grams
  • plant-based milk - 150 ml
  • flaxseed meal - 1 tablespoon
  • water - 2 tablespoons
  • baking powder - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • olive oil - for cooking
  • fresh dill - for garnish

Steps

  1. In a small bowl, mix the flaxseed meal with water and let it sit for about 5 minutes to create a flax egg.
  2. In a blender, combine the cooked beetroot, plant-based milk, and the flax egg, and blend until smooth.
  3. In a mixing bowl, whisk together the all-purpose flour, baking powder, salt, and black pepper.
  4. Gradually pour the beetroot mixture into the dry ingredients, stirring until just combined.
  5. Heat a non-stick skillet over medium heat and lightly coat with olive oil.
  6. Pour 1/4 cup of the batter onto the skillet for each blini, cooking for about 2-3 minutes on one side until bubbles form, then flip and cook for another 2 minutes on the other side.
  7. Repeat until all the batter is used, adding more oil as needed.
  8. Serve warm, garnished with fresh dill and a drizzle of your favorite vegan sauce.
