  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Zucchini - 100 grams, grated
  • Carrot - 100 grams, grated
  • Spinach - 50 grams, chopped
  • Feta cheese - 50 grams, crumbled
  • Fresh dill - 1 tablespoon, chopped
  • Crème fraîche - for serving

Steps

  1. In a mixing bowl, combine the buckwheat flour, all-purpose flour, baking powder, and salt.
  2. In another bowl, whisk together the milk and egg until well combined.
  3. Gradually add the wet mixture to the dry ingredients, stirring until just combined.
  4. Fold in the grated zucchini, grated carrot, chopped spinach, crumbled feta cheese, and fresh dill into the batter.
  5. Heat a non-stick skillet over medium heat and add a teaspoon of olive oil.
  6. Pour a small ladle of batter onto the skillet, forming small pancakes, and cook for about 3-4 minutes on each side or until golden brown.
  7. Repeat with the remaining batter, adding more olive oil to the skillet as needed.
  8. Serve the blinis warm, topped with a dollop of crème fraîche and garnished with extra dill if desired.
