- Spinach - 50 grams, chopped

- Fresh dill - 1 tablespoon, chopped
- Crème fraîche - for serving
Steps
- In a mixing bowl, combine the buckwheat flour, all-purpose flour, baking powder, and salt.
- In another bowl, whisk together the milk and egg until well combined.
- Gradually add the wet mixture to the dry ingredients, stirring until just combined.
- Fold in the grated zucchini, grated carrot, chopped spinach, crumbled feta cheese, and fresh dill into the batter.
- Heat a non-stick skillet over medium heat and add a teaspoon of olive oil.
- Pour a small ladle of batter onto the skillet, forming small pancakes, and cook for about 3-4 minutes on each side or until golden brown.
- Repeat with the remaining batter, adding more olive oil to the skillet as needed.
- Serve the blinis warm, topped with a dollop of crème fraîche and garnished with extra dill if desired.
