Ingredients

  • Buckwheat flour - 100 grams
  • All-purpose flour - 50 grams
  • Milk - 200 ml
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Baking powder - 1 teaspoon
  • Butter - 30 grams (for cooking)
  • Mushrooms (chanterelles or cremini) - 200 grams, sliced
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon
  • Salt and pepper - to taste

Steps

  1. In a mixing bowl, combine buckwheat flour, all-purpose flour, baking powder, and salt.
  2. In another bowl, whisk together the milk and egg until well combined.
  3. Gradually add the wet ingredients to the dry ingredients, mixing until smooth. Let the batter rest for 10 minutes.
  4. While the batter is resting, heat olive oil in a skillet over medium heat. Add the sliced mushrooms and sauté for about 5 minutes until they release moisture and become golden.
  5. Add minced garlic to the mushrooms and cook for an additional 1-2 minutes, then stir in chopped parsley and season with salt and pepper. Remove from heat.
  6. In a separate non-stick skillet, melt a bit of butter over medium heat. Pour small amounts of batter (about 1/4 cup) into the skillet to form blinis. Cook for about 2-3 minutes on each side until golden brown.
  7. Repeat until all the batter is used, adding more butter as needed.
  8. To serve, stack the blinis on plates and top generously with the sautéed mushroom mixture.
