- Milk - 200 ml
- Egg - 1 large

- Baking powder - 1 teaspoon
- Butter - 30 grams (for cooking)
- Mushrooms (chanterelles or cremini) - 200 grams, sliced
- Garlic - 1 clove, minced
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 1 tablespoon
- Salt and pepper - to taste
Steps
- In a mixing bowl, combine buckwheat flour, all-purpose flour, baking powder, and salt.
- In another bowl, whisk together the milk and egg until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until smooth. Let the batter rest for 10 minutes.
- While the batter is resting, heat olive oil in a skillet over medium heat. Add the sliced mushrooms and sauté for about 5 minutes until they release moisture and become golden.
- Add minced garlic to the mushrooms and cook for an additional 1-2 minutes, then stir in chopped parsley and season with salt and pepper. Remove from heat.
- In a separate non-stick skillet, melt a bit of butter over medium heat. Pour small amounts of batter (about 1/4 cup) into the skillet to form blinis. Cook for about 2-3 minutes on each side until golden brown.
- Repeat until all the batter is used, adding more butter as needed.
- To serve, stack the blinis on plates and top generously with the sautéed mushroom mixture.
