- Buckwheat flour - 100g
- All-purpose flour - 50g
- Milk - 200ml
- Yeast - 5g
- Egg - 1 large
- Salt - 1/2 tsp
- Butter - 30g (melted, plus extra for cooking)
- Cream cheese - 100g
- Smoked salmon - 100g
- Fresh dill - 1 tbsp (chopped)
- Lemon - 1 (for zest and wedges)
Steps
- In a bowl, mix the buckwheat flour, all-purpose flour, yeast, and salt.
- In a separate bowl, whisk together the milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until smooth. Let the batter rest for 15 minutes.
- Heat a non-stick skillet over medium heat and add a small amount of butter.
- Pour small amounts of the batter into the skillet to form pancakes (about 10cm in diameter). Cook until bubbles form on the surface and the edges look set, about 2-3 minutes, then flip and cook for another 2 minutes until golden brown.
- Repeat until all the batter is used, adding more butter to the skillet as needed.
- To assemble, spread a layer of cream cheese on each blini, top with slices of smoked salmon, and garnish with chopped dill and a squeeze of lemon juice.
- Serve immediately with lemon wedges on the side.
