Ingredients

  • Buckwheat flour - 100g
  • All-purpose flour - 50g
  • Milk - 200ml
  • Yeast - 5g
  • Egg - 1 large
  • Salt - 1/2 tsp
  • Butter - 30g (melted, plus extra for cooking)
  • Cream cheese - 100g
  • Smoked salmon - 100g
  • Fresh dill - 1 tbsp (chopped)
  • Lemon - 1 (for zest and wedges)

Steps

  1. In a bowl, mix the buckwheat flour, all-purpose flour, yeast, and salt.
  2. In a separate bowl, whisk together the milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until smooth. Let the batter rest for 15 minutes.
  4. Heat a non-stick skillet over medium heat and add a small amount of butter.
  5. Pour small amounts of the batter into the skillet to form pancakes (about 10cm in diameter). Cook until bubbles form on the surface and the edges look set, about 2-3 minutes, then flip and cook for another 2 minutes until golden brown.
  6. Repeat until all the batter is used, adding more butter to the skillet as needed.
  7. To assemble, spread a layer of cream cheese on each blini, top with slices of smoked salmon, and garnish with chopped dill and a squeeze of lemon juice.
  8. Serve immediately with lemon wedges on the side.
