Ingredients

  • Veal shoulder - 400 grams, cut into 2.5 cm cubes
  • Carrot - 1 medium, sliced
  • Onion - 1 small, chopped
  • Celery - 1 stalk, sliced
  • Garlic - 1 clove, minced
  • Bay leaf - 1
  • Thyme - 1 sprig
  • Water - 500 ml
  • Butter - 30 grams
  • All-purpose flour - 30 grams
  • Heavy cream - 100 ml
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large pot, melt the butter over medium heat. Add the chopped onion, carrot, celery, and garlic, sautéing until softened, about 5 minutes.
  2. Add the veal cubes to the pot, stirring occasionally until browned on all sides, about 10 minutes.
  3. Pour in the water and add the bay leaf and thyme. Bring to a simmer, then cover and reduce the heat to low. Let it cook for about 60 minutes, or until the veal is tender.
  4. In a small bowl, mix the flour with a bit of the cooking liquid to create a smooth paste. Gradually whisk this paste back into the pot to thicken the sauce.
  5. Stir in the heavy cream and lemon juice, and season with salt and black pepper. Simmer for another 5-10 minutes until the sauce is creamy and thickened.
  6. Serve hot, garnished with freshly chopped parsley.
