- Veal shoulder - 400 grams, cut into 2.5 cm cubes
- Carrot - 1 medium, sliced
- Onion - 1 small, chopped
- Celery - 1 stalk, sliced
- Garlic - 1 clove, minced
- Bay leaf - 1
- Thyme - 1 sprig
- Water - 500 ml
- Butter - 30 grams
- All-purpose flour - 30 grams
- Heavy cream - 100 ml
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large pot, melt the butter over medium heat. Add the chopped onion, carrot, celery, and garlic, sautéing until softened, about 5 minutes.
- Add the veal cubes to the pot, stirring occasionally until browned on all sides, about 10 minutes.
- Pour in the water and add the bay leaf and thyme. Bring to a simmer, then cover and reduce the heat to low. Let it cook for about 60 minutes, or until the veal is tender.
- In a small bowl, mix the flour with a bit of the cooking liquid to create a smooth paste. Gradually whisk this paste back into the pot to thicken the sauce.
- Stir in the heavy cream and lemon juice, and season with salt and black pepper. Simmer for another 5-10 minutes until the sauce is creamy and thickened.
- Serve hot, garnished with freshly chopped parsley.
