Ingredients

  • Ground beef (80% lean) - 300 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Gruyère cheese - 100 grams, sliced
  • Yellow onion - 1 medium, thinly sliced
  • Brioche buns - 2
  • Butter - 1 tablespoon
  • Fresh arugula - 50 grams
  • Dijon mustard - 1 tablespoon

Steps

  1. In a mixing bowl, combine the ground beef, salt, black pepper, and garlic powder. Shape the mixture into two equal patties, making a slight indentation in the center of each patty.
  2. Heat the olive oil in a skillet over medium heat. Once hot, add the onion slices and cook until they become soft and caramelized, about 10-12 minutes. Stir occasionally to prevent burning.
  3. While the onions are caramelizing, preheat a separate skillet or grill over medium-high heat. Cook the beef patties for about 4-5 minutes on each side for medium doneness, or until cooked to your desired level.
  4. In the last minute of cooking, place a slice of Gruyère cheese on each patty and cover the skillet to melt the cheese.
  5. While the burger patties are cooking, butter the brioche buns and toast them lightly in a separate pan until golden brown.
  6. To assemble the burgers, spread a tablespoon of Dijon mustard on the bottom half of each toasted brioche bun. Layer with fresh arugula, the cheese-topped patty, and a generous scoop of caramelized onions. Top with the other half of the bun.
  7. Serve immediately with your favorite sides.
