- Red onion - 1 medium, cut into wedges

- Dijon mustard - 1 tablespoon
- Fresh thyme - 1 teaspoon, chopped
- Fresh rosemary - 1 teaspoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Skewers - 4 (if wooden, soaked in water for 30 minutes)
Steps
- In a mixing bowl, combine the olive oil, Dijon mustard, minced garlic, chopped thyme, chopped rosemary, lemon juice, salt, and black pepper to create a marinade.
- Add the cubed chicken to the marinade, mixing well to ensure all pieces are coated. Cover and refrigerate for at least 15 minutes.
- While the chicken marinates, prepare the vegetables by cutting the red bell pepper, zucchini, and red onion into appropriate sizes for skewering.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken and assorted vegetables onto the skewers, alternating between chicken and vegetables.
- Once the grill is hot, place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is fully cooked and has nice grill marks.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
