Ingredients

  • Basmati rice - 200 grams
  • Halal chicken thighs - 300 grams, skinless and boneless, cut into chunks
  • Onion - 1 medium, finely sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Tomato - 1 medium, chopped
  • Yogurt - 100 grams
  • Fresh cilantro - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Biryani spice mix - 2 teaspoons
  • Turmeric powder - 1/2 teaspoon
  • Cinnamon stick - 1 small
  • Cardamom pods - 2, slightly crushed
  • Cloves - 2
  • Bay leaf - 1
  • Cooking oil - 2 tablespoons
  • Salt - to taste
  • Water - 500 ml

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large bowl, combine the chicken, yogurt, biryani spice mix, turmeric, garlic, ginger, and salt. Mix well and let it marinate for at least 15 minutes.
  3. In a large pot, heat the cooking oil over medium heat. Add the sliced onion and sauté until golden brown.
  4. Add the marinated chicken to the pot and cook for 10-15 minutes until the chicken is browned and cooked through.
  5. Stir in the chopped tomato, cinnamon stick, cardamom pods, cloves, and bay leaf. Cook for an additional 5 minutes.
  6. Drain the soaked rice and add it to the pot with 500 ml of water. Bring to a boil, then reduce the heat to low, cover, and let it simmer for 20 minutes until the rice is cooked and water is absorbed.
  7. Remove from heat and let it rest covered for 10 minutes. Fluff the rice gently with a fork.
  8. Garnish with fresh cilantro and mint before serving.
