Ingredients
- Basmati rice - 200 grams
- Halal chicken thighs - 300 grams, skinless and boneless, cut into chunks
- Onion - 1 medium, finely sliced
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, grated
- Tomato - 1 medium, chopped
- Yogurt - 100 grams
- Fresh cilantro - 2 tablespoons, chopped
- Fresh mint - 2 tablespoons, chopped
- Biryani spice mix - 2 teaspoons
- Turmeric powder - 1/2 teaspoon
- Cinnamon stick - 1 small
- Cardamom pods - 2, slightly crushed
- Cloves - 2
- Bay leaf - 1
- Cooking oil - 2 tablespoons
- Salt - to taste
- Water - 500 ml
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large bowl, combine the chicken, yogurt, biryani spice mix, turmeric, garlic, ginger, and salt. Mix well and let it marinate for at least 15 minutes.
- In a large pot, heat the cooking oil over medium heat. Add the sliced onion and sauté until golden brown.
- Add the marinated chicken to the pot and cook for 10-15 minutes until the chicken is browned and cooked through.
- Stir in the chopped tomato, cinnamon stick, cardamom pods, cloves, and bay leaf. Cook for an additional 5 minutes.
- Drain the soaked rice and add it to the pot with 500 ml of water. Bring to a boil, then reduce the heat to low, cover, and let it simmer for 20 minutes until the rice is cooked and water is absorbed.
- Remove from heat and let it rest covered for 10 minutes. Fluff the rice gently with a fork.
- Garnish with fresh cilantro and mint before serving.
