  • Shallot - 1 small, finely chopped
  • Capers - 1 tablespoon, rinsed and chopped
  • Dijon mustard - 1 teaspoon
  • Worcestershire sauce - 1 teaspoon
  • Fresh parsley - 1 tablespoon, finely chopped
  • Fresh chives - 1 tablespoon, finely chopped
  • Egg yolk - 1 large (ensure it's from a kosher source)
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Paprika - a pinch
  • Tostadas or crackers - for serving

Steps

  1. Start by ensuring all your utensils and work surfaces are clean and sanitized, as you will be handling raw meat.
  2. Finely chop the beef tenderloin using a sharp knife, ensuring it is cut into small, uniform pieces for a pleasant texture.
  3. In a mixing bowl, combine the chopped beef with the shallot, capers, Dijon mustard, Worcestershire sauce, parsley, chives, olive oil, salt, black pepper, and paprika. Mix gently to ensure all ingredients are evenly distributed.
  4. Taste the mixture and adjust seasoning if necessary, adding more salt or pepper according to your preference.
  5. Divide the beef mixture into two equal portions and shape them into round patties on a plate.
  6. Create a small indentation in the center of each patty and carefully place a raw egg yolk in each indentation.
  7. Serve immediately with tostadas or crackers on the side for scooping.
