Ingredients

  • Baguette - 1 large (about 250g)
  • Ricotta cheese - 150g
  • Fresh basil - 10g
  • Fresh chives - 10g
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 100g
  • Cucumber - 100g
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Balsamic glaze - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the baguette into 2 equal halves lengthwise and place on a baking tray.
  3. In a bowl, mix the ricotta cheese with chopped basil, chives, olive oil, salt, and black pepper until well combined.
  4. Spread the herb-infused ricotta generously over each half of the baguette.
  5. Bake the baguette halves in the preheated oven for 10-12 minutes or until the edges are golden and crispy.
  6. While the baguette is baking, wash and slice the cherry tomatoes and cucumber.
  7. Remove the baguette from the oven and top with sliced cherry tomatoes and cucumber.
  8. Drizzle with balsamic glaze before serving.
