- Ripe avocado - 1 medium (about 150g)
- Fresh lemon juice - 1 tablespoon (15ml)
- Salt - 1/4 teaspoon (1.5g)
- Black pepper - 1/4 teaspoon (1g)
- Fresh basil leaves - 5g
- Cherry tomatoes - 100g (halved)
- Extra virgin olive oil - 1 tablespoon (15ml)
- Chili flakes - 1/4 teaspoon (optional)
Steps
- Preheat the oven to 180°C (350°F).
- Slice the baguette in half lengthwise and place it on a baking sheet.
- Toast the baguette in the preheated oven for about 5-7 minutes until it is crispy and golden.
- While the baguette is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
- Mash the avocado with a fork and mix in the lemon juice, salt, and black pepper.
- Once the baguette is toasted, remove it from the oven and spread the mashed avocado evenly over each half.
- Top with halved cherry tomatoes and sprinkle fresh basil leaves over the top.
- Drizzle with extra virgin olive oil and add chili flakes if desired.
