  • Ripe avocado - 1 medium (about 150g)
  • Fresh lemon juice - 1 tablespoon (15ml)
  • Salt - 1/4 teaspoon (1.5g)
  • Black pepper - 1/4 teaspoon (1g)
  • Fresh basil leaves - 5g
  • Cherry tomatoes - 100g (halved)
  • Extra virgin olive oil - 1 tablespoon (15ml)
  • Chili flakes - 1/4 teaspoon (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Slice the baguette in half lengthwise and place it on a baking sheet.
  3. Toast the baguette in the preheated oven for about 5-7 minutes until it is crispy and golden.
  4. While the baguette is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
  5. Mash the avocado with a fork and mix in the lemon juice, salt, and black pepper.
  6. Once the baguette is toasted, remove it from the oven and spread the mashed avocado evenly over each half.
  7. Top with halved cherry tomatoes and sprinkle fresh basil leaves over the top.
  8. Drizzle with extra virgin olive oil and add chili flakes if desired.
