Ingredients

  • Potatoes - 300 grams, thinly sliced
  • Carrots - 150 grams, thinly sliced
  • Onion - 100 grams, thinly sliced
  • Leeks - 100 grams, chopped
  • Mushrooms - 100 grams, sliced
  • Cauliflower - 150 grams, cut into small florets
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Thyme - 1 teaspoon, dried
  • Rosemary - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 300 ml
  • Bay leaf - 1

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large mixing bowl, combine sliced potatoes, carrots, onions, leeks, mushrooms, and cauliflower.
  3. In a small bowl, mix olive oil, minced garlic, thyme, rosemary, salt, and black pepper.
  4. Pour the oil mixture over the vegetables and toss to coat evenly.
  5. In a baking dish, layer half of the vegetable mixture at the bottom.
  6. Add the bay leaf on top, then layer the remaining vegetables.
  7. Pour vegetable broth evenly over the top of the layered vegetables.
  8. Cover the baking dish with aluminum foil.
  9. Bake in the preheated oven for 60 minutes.
  10. Remove the foil and bake for an additional 30 minutes, or until the vegetables are tender and slightly golden on top.
