- Onion - 100 grams, thinly sliced
- Leeks - 100 grams, chopped
- Mushrooms - 100 grams, sliced
- Cauliflower - 150 grams, cut into small florets
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Thyme - 1 teaspoon, dried
- Rosemary - 1 teaspoon, dried
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 300 ml
- Bay leaf - 1
Steps
- Preheat the oven to 180°C (350°F).
- In a large mixing bowl, combine sliced potatoes, carrots, onions, leeks, mushrooms, and cauliflower.
- In a small bowl, mix olive oil, minced garlic, thyme, rosemary, salt, and black pepper.
- Pour the oil mixture over the vegetables and toss to coat evenly.
- In a baking dish, layer half of the vegetable mixture at the bottom.
- Add the bay leaf on top, then layer the remaining vegetables.
- Pour vegetable broth evenly over the top of the layered vegetables.
- Cover the baking dish with aluminum foil.
- Bake in the preheated oven for 60 minutes.
- Remove the foil and bake for an additional 30 minutes, or until the vegetables are tender and slightly golden on top.
