- ground flaxseed - 1 tbsp
- water - 2.5 tbsp
- vanilla extract - 1 tsp
- orange zest - 1 tsp
- salt - 1/4 tsp
- dark rum - 60ml
- maple syrup - 30ml
- fresh fruit (e.g., raspberries, for garnish) - as desired
Steps
- In a small bowl, mix ground flaxseed with water and let it sit for 10 minutes to thicken.
- In a saucepan, heat almond milk until warm (not boiling) and dissolve the coconut sugar and yeast. Let it sit for 5 minutes until frothy.
- In a large mixing bowl, combine flour, salt, orange zest, and the flax mixture. Pour in the yeast mixture and melted coconut oil, and mix until a dough forms.
- Knead the dough for about 5 minutes on a floured surface until smooth. Place in a greased bowl, cover with a towel, and let it rise in a warm place for about 30 minutes.
- Preheat the oven to 180°C (350°F). After the dough has risen, punch it down and divide it into two equal parts. Shape each part into a small ball and place them in greased ramekins.
- Let the dough rise again in the ramekins for an additional 15 minutes.
- Bake the baba for 15-20 minutes or until golden brown. Remove from the oven and let cool slightly.
- In a small saucepan, combine dark rum and maple syrup. Heat gently until warm, then pour the mixture over the babas while they are still warm, allowing them to soak up the rum syrup.
- Serve the baba au rhum warm or at room temperature, garnished with fresh fruit.
